We harvest our agave at the moment of perfect maturity—which is between 8 and 10 years—in the fields of the Valle de Tequila; during their lifetime the plants are shaped using a cut which allows the sugars a longer time to accumulate and concentrate in the heart of the agave.
We use only the first press juice (aguamiel) that is extracted after cooking the heart of the agaves (piñas), leaving a liquid of the finest quality.
We set an unequalled aging standard for 5 years in, medium toasted, american oak barrels.
We have developed a unique natural filtration process whereby we preserve the essence of Extra Añejo and prevent loss of flavor, leaving the liquid superbly smooth.
